Here is to baking with new recipes to “bring comfort” in times of uncertainty. Let's all hit the reset button together.

Preheat oven to 300 degrees F (150 degrees C). Prepare a loaf tin with a cooking spray such as Coconut oil spray. 

In a large bowl mix coconut oil, honey, eggs and vanilla extract. Now add mashed bananas, and stir until blended.

Now sift in the flour and other dry ingredients; cinnamon, baking powder, nutmeg and pinch of salt. stir the mixture until well blended. Pour batter into prepared loaf tin.

Bake in the preheated oven for about 1 hour. Test if its readh with a clean knife inserted into the center, if ready it will come out clean.

Cool in the loaf tin for 10 minutes before removing. 

Note: According to Dr. Oz, coconut oil can also help boost thyroid function and ward off illness-causing bacteria and viruses.

And  due to the country running out of flour we suggest making your own almond flour by grinding almonds in a food processor )don't process too long, or it will be almond butter instead of almond flour). And it tastes incredible with homemade almond flour!


Coconut oil cooking spray

3 cups almond flour

3 ripe bananas, mashed

1/4 cup coconut oil, melted

1/4 cup honey

1 teaspoon vanilla extract

3 eggs

1 teaspoon ground cinnamon

3/4 teaspoon baking powder

1/2 teaspoon ground nutmeg

Pinch of salt
